Knife Sharpening Techniques
      #233951 - 10/08/13 07:53 PM

Hi
I have always used Japanese synthetic stones to sharpen my knives. Starting with a 1000 grit and then moving up and normally finishing with a 10,000 grit when I am really keen.
Recently I have been looking into using Japanese natural stones however my understanding is that you need to pick the right stone and it takes a lot of practice to get a good result.
I would be interested in knowing what techniques other members use?
Rick

Hard granite rock and a lot of used motor oil. For some reason, the blade doesn't hold much of an edge, but works well as a semi-dull saw.

I originally used an electric sharpener, but blades wore thin in a couple of weeks.

I bought the book and the kit about 9 years ago after spending god knows what on other systems, read the book then get going, it is the only stuff you need, this guy is in the Guiness book of records for sharpening an AXE he could shave with !!

I use

Lansky sharpening system.

Diamond Stone.

I have in the past used a Stone, stone.

I need a couple more stones so might look at the water stones.

My brother has a local sharpening business - knives, axes, scissors - both standard and hair cutting. His stuff is scary sharp - all on stones, ceramic stones, synthetic stones, etc. You could shave with anything he sharpens, including the scissors.
I lack that sharpening skill, preferring to get a good edge with my stones, then hone that edge into scary sharpness on a long set of alumina (not ceramic) sticks or a fine diamond hone. A good stopping makes them popping sharp.

Soft to hard Arkansas stones and stropped on leather for a razors edge. my Great Uncle taught me when I was 7 and it still works almost 5 decades later:-)

I have a number of different stones. Some work far better than others, a small travelling one works really well but is generally too small for use at home.

Have to see if I have the names or types of them still, on the box or the stone.

One method that does not work. Go for a hunting trip with a friend who has extra keen knives, offer to do some reloading for him, spend two hours reloading, in return for him sharpening a couple of blunt knives. Give him the knives, and him spend twenty seconds, on a stone and then hand you back blunt knives. Note at the time, never reload for the prick ever again ...

I also have the Loray/Lansky sharpening system, and it sort of works at times. Depends on the knife. A bigger stone is better.
