Knife Sharpening Techniques

Hi
I have always used Japanese synthetic stones to sharpen my knives. Starting with a 1000 grit and then moving up and normally finishing with a 10,000 grit when I am really keen.
Recently I have been looking into using Japanese natural stones however my understanding is that you need to pick the right stone and it takes a lot of practice to get a good result.
I would be interested in knowing what techniques other members use?
