There are now a lot of Capercaillie and Black grouse in the forests near my home. There could be some nice hunts this autumn and winter. Here are some photos of a Capercaille. A Forestbird. Bodylength 75-90 cm, winglength 115 cm.

Excellent photos Staffan. Capercaillie are a great game bird and great fun but frustrating to hunt.

In my part of the country they are mostly hunted with dogs that bark under the tree they are sitting in. Then shot with rifle and if you can come really close with shotgun. You must be hiding all the time so there are often some distance when you take the shot. Often we hunt with a dog named "Finnspets". Looks like a fox with longer legs.

That's a big grouse - up to 3' body, wing span almost 4'.
Are they dark or light meat in the breast meat?

Capercaillies breas meat is quite dark.

The darkmeat might put me off. I usually don't eat Franklins or SharpTailed grouse due to the dark meat - strong tasting, almost liver taste on the Sharpies I had.

The Ruffed grouse where have very light coloured meat, not quite as white as chicken, but very light coloured and 'delicate' tasting - quite lovely actually.

Looks like just one of those Capercaillie's would make a decent stew for a family. That might be a good way to eat them? Any thoughts on that?
