Beaver is great, have had it many times. Have been trapping them for decades. Best to stick with the younger ones, but the older ones are good as well, just make sure they are trimmed up more with regards to gristle and tendons in the bigger cuts. I also make sure every last bit of fat is trimmed off of beaver and I generally only eat the ones that came from places I am trapping with moving/running water in the system, not isolated, really muddy ponds. |
