Have not read all the responses on here as I am in a bit of a hurry today..but some things I used to do with my German Wirehairs was put a bird wing on a fishing pole..let them try to catch it and then after a bit slow it down and let them go on point...at that time you could encourage them to hold a strong point..

another thing I used to do is tie a bird wing onto a dummy and then while out walking toss it upwind without the dog seeing you do it...circle back and let the dog pick up the scent..see how well he does at that...

Finally I also used to buy pigeons and place them out in a field as the dog got older..have the dog on a long check cord..as he closes in keep watch he goes on a staunch point..you can encourage it with a slight tug of the cord...
