In reply to: Next time on your ostrich try 2 parts olive oil, 1 part best grade (Kikoman natural low sodiunm...Green lid ! ) soy sauce, Pinch of sea salt. A few turns fresh ground black pepper and a few cloves of crushed garlic. Blend it and marinate the steaks before you grill em.
I'm going to try that with emu.
