Help with Sight choice?

I am about to have some work (bedding, tune up, sights, etc.) done on a M70 Safari Express in 375H&H. My question is regarding sight choice. I have been pretty much set on a set of express sights and front sight from NECG but was curious for thoughts on using a peep sight instead of the standard express sights

. I have never owned or hunted with a rifle equiped with a peep sight but have heard many posters write about how much they like using a peep sight versus express. Are there different styles of peeps and if so which work the best for hunting and what are the differences? I want something strong, simple and easy to use.

What do you guys think? The rifle will see most of its hunting use in Africa for a wide range of species including DG. Pros and Cons? My dad will use it a lot and he doesn't have the greatest eyesight, which would be better for him? Any info or experiences very much appreciated.
