That's a small one & quite possibly would be tender however it was roasted. I've not eaten one for 30 years, maybe more. My wife made me promise to never bring another one home.
As the saying goes, you couldn't chew the gravy.
He was a VERY large goose.
This recipe is a lot more involved than what I or perhaps my wife did with ours. Maybe we overcooked it.
