Spot-on regards the tail. I've eaten beaver ribs, roasted on a willow rack against a fire - delicious. The leg and back meat, de-boned and made into a stew with celery, carrots and potatoes, also delicious. As far as I am concerned, the tail is inedible - all gristle and fat from what I saw.
