I was not implying that you should use a high gloss finish, just that very hard maple, which includes some fiddle back, quilted and especially flame, is unique in its very tight and dense grain structure, which allows you to polish it almost like stone.

Using the finish you are saying should produce a very deep lustre finish, and make a gorgeous stock.
