The 7x57R handloaded will outperform the 6.5mm.

Depending on what the Ferlach guns are, ie if needing regulation loads etc.

I would go for the 7x57R before the 6.5x57R.

I would go for the 6,5x57R, a lovely cartridge that is nothing to sneeze at. A 140 grain 6,5 bullet do the trick on all game in Europe. In a modern kiplauf with Jäger block action you can load the 6,5x57R to a very good performance.
