Because of the long top strap, which prohibits stock bending, at least that is what I've been told by three or four makers or smiths who bend stocks. Amounst those would be JJ and the folks at Griffin&Howe. The long grip strap doesn't help either.

BTW, I did the same wood removal with my Thys and it is pretty invisible when the wood taken away is carried well forward and to the butt.

The key to making really work is to be there when the wood is removed. Remove wood, try the rifle, remove more wood, try the rifle... Get close and remove wood, go mount and shoot the rifle quickly, like you would with a try gun on a patterning board. If it fits, it hits the target, if it doesn't go back to work...

The key is to ensure that you are shooting very quickly so that you do not adjust to the rifle and make the sights work. With even a little time from mount to shooting, you can unconciously adjust yourself to almost any stock to make the sights work. I am a believer that your rifle needs to shoot where your looking and your sights are almost secondary, for use when you have time, but just to double check...
