The eland fillet is fantastic! I enjoyed inpala mince too. It was browned with spicy chutney, onions and peppers. I ate zebra and impala liver with the trackers. It was mild and quite delicious. The homemade sausage is good too. When the skinners are through there is nothing left of the gut pile but stomach contents. Nothing is wasted or discarded.
