Geese at last!

After rather a slow start to the Northern Territory waterfowl season (I came home on opening morning with clean barrels!), things are turning out well at last. Regular storms are cutting boggy swaths across the Howard and Adelaide River flood-plains on a regular basis now, and the birds are flying well. Best of all, the black-soil plains are now too risky for the 'dunces' to park their white Toyotas out in the open, right under the best flight-paths, as the lazy bastards are prone to do! Consequently, the geese are flighting well within range of the non-toxic shot mandated for the local hunting reserves.

The season was extended to the end of December this year, since the whole year has been running about a month late season-wise. Usually we ask Parks & Wildlife to close the waterfowl season mid-December, to prevent damage to the unsealed access roads during the onset of the 'wet', but no need to worry this year.



I watched the sun rise over Harrison Dam yesterday (Boxing Day), and bagged-out on geese in half an hour. We are allowed 7 geese and 7 ducks per day for 4 months, but rarely does a hunter manage his 14-bird limit! I was content with only geese yesterday, spurred on by a request from my daughter on duty in Afghanistan to "make sure there's plenty of goose-meat in the freezer when I get home".

See if you can guess where I'll be at dawn tomorrow!

Do you pluck the whole goose, or just take the breasts?

How do you cook them - your favourite recipe?

I routinely bone-out the breast-meat and the legs, which leaves very little meat wasted. I also take the hearts, if they're still in one piece, and the gizzard which is delicious if done right. Several times each season, we pluck a couple of fat birds for roasting whole. I pluck and roast all ducks, but prefer blackies. Whistle-ducks are harder to pluck, and a bit tough when roasted, but they still taste great. I bagged 4 blackies this morning, on top of my seven geese and a brace of whistle-ducks. Hands are still sore from plucking! ..but frige is full!

Might give it one more go tomorrow, then good crabbing tides on Saturday. Love the Christmas hols!

BTW, my favourite recipe for goose is simplicity itself. Slice up the breast fillets and thigh meat into thin strips, dust heavily with Masterfoods Cajun Spices, the 'hot' one. Get the oil smoking-hot, then toss in the goose-meat and stir-fry hot and fast, keeping everything moving, for 4 or 5 minutes till brown and firm, then serve! Perfect finger-food with a cold ale or chilled shiraz (yes, we do that here in the tropics in December!)
Brings the red down to the equivalent of your room temperature!

Yes please! I'm happy to try new ways to serve goose, especially when the freezer is looking healthy! Another 7 birds were added yesterday morning.

We have a couple of chefs in our local Arms Collectors Association, one has given us a curry recipe, Badun Tamil style, but its a bit complicated. Nevertheless, I must do it before I see him next, or else.....!

Another friend who doesn't hunt is happy to make Goose Stroganof, and she is a fantastic cook. Come to think of it, I better let her know about my recent success out on the swamp... !

Here's the recipe - I posted it in a British forum and the members there seemed to like it. DO let me know what you think about it:

Goose Curry in Vindaloo Sauce

--------------------------------------------------------------------------------

Ingredients:

2 kg Goose, quartered and skinned and cut into chunks
6 Dried red chillies, stemmed -and broken
1/2 cup Distilled white vinegar
8-10 Garlic cloves, peeled
1 Half-inch piece peeled fresh -ginger
2 tsp cumin powder
2 tsp coriander powder
1/2 tsp cinnamon powder
2 tbsp vegetable oil
1 tsp Salt, or to taste
1 cup Water
2 tsp Sugar
2 tbsp cilantro or parsley (chopped fine)

For Marinade:

Soak chillies in vinegar for 15 minutes. Add garlic and ginger and blend into a puree. Add cumin, coriander and cinnamon powder and mix thoroughly.

Method:

Coat goose pieces well with marinade.
Cover and refrigerate for at least 2 hours.
Heat oil in a large oven over medium-high heat.
Add marinaded pieces and brown on all sides.
Add salt, water, sugar and any remaining spice puree.
Bring to a boil.
Cover and simmer, stirring occasionally, until it is tender, (approx. 1 hour.)
Skim off all fat.
Transfer to a heated platter, pour sauce over, and garnish with minced cilantro. Eat it with white rice or a pilaf.

If you would like a cocktail with it, I have posted a recipe for Planter's Punch in the Recipes section. But any cocktail or drink with a hint of sweetness goes well with it.

Both my daughters are keen goose-hunters! Before Christmas my youngest brought two of her uni friends home with her for a week's holiday, they had never been to the 'Top End' before and my daughter wanted them to get the 'full Northern Territory experience'. Naturally, that included a dawn session out on the goose swamps. I was apprehensive, to say the least, but they had a ball! Even helped-out with the gutting and plucking afterwards. Very brave girls!

My daughter is the tall one!

You will have to try a good sparkling shiraz chilled like champage. A nice E&E Black Pepper Shiraz Sparkling or a Black NV (ie Black envy) St Hallett sparkling shiraz (made from Old Block Shiraz wine). I have a few bottles lying around. I will bring one up for us to enjoy with some finger food cajun goose next time I come up for a visit (if you remind me! ).

Very true, a good red needs to be cooled a little in the tropics.
