Are Water Buffalo good eating?

My son-in-Law has been offered to go on a cull hunt here in Texas. I just wanted to know if my Auzzie mates tell me of their experiences. I might want to tag along and whack one with the double.

Rusty,

Yes, generally they are great eating.

Regardless of age, the Back Straps are excellent eating
as is the other cut of meat under the back bone (sorry, brain dead
tonight and can't think of the nam of the cut).

All the meat on a Buff is good to eat and Ribs make
great roasting with sauce.

Some of the old bulls are a bit tough but when the meat
is cut up they make great stews / curries.

Rusty,

In India and possibly in other Asian countries water buffaloes are used as milch cattle and also eaten for their meat. It is a little tougher than beef though it has considerably less fat. The Brits used to call it "carrow beef" in India and official government references to buffalo meat in India still call it by that name though I have never been able to find out what the term means or how it came about.

Indians also like to eat the liver and the brain fried with pepper and different herbs. It is spicy and goes extremely well with a nice beer on a hot day. If you like trying different recipes for spicy food, try this website.

We're still working our way through a few buffalo rumps and other cuts dropped off by a safari operator mate (Matt G_) at season's close.

Brief sea-food interlude over Christmas has now abated...
