Jugged Hare is the recipe made from wild hare, red wine and blood, made in a "jug" or casserole, slow cooked. Barossa hares shot in the vineyards are already "marinated" by eating vine leaves.

Enjoy with a plate of hare casserole and a glass of red wine.

I don't see many hares currently, probably shot heavily by the "investment plantation" vineyard neighbour and wasted, but I do have big "hares" than hop around in the vineyards. Sometimes a dozen of them. Maybe some "Jugged Roo" is in order.

The roos are here a lot nowadays. In the past when there was drought they come to places like this. I have some permanently here now. Even have had six RED roos, the plains roos, not the usual Eastern Grey Roos, and Euros/Wallaroos. Wallaroos are species smaller than the three main species of kangaroos. And in between roos and wallabies.

How large are these hares?
Recipe calls for one hare to feed six at the table

No doesn't feed six persons.

I'll need to weigh a skinned gutted, beheaded and feet cut off hare or two next time I shoot one. Haven't seen one for a while, except on the roads.

The European Hares we had in South Western Ontario ran 10 to 12 pounds live (dead) weight. The odd one was larger yet. My Belgium Shepherd dog got them all. He loaded them. I'd chop them (frozen) in 1/2 with a sickle and he'd get 1/2 one day, and 1/2 the next.
The snowshoe hares out West here, run about 1/2 again heavier than a cottontail - maybe 2 1/2 pounds. Just a guess.
Just looked at the picture of the young man with the brace of hares. Our snowshoe hares are the same to just barely smaller than those but have longer hind legs & larger feet..
