Our cook used to serve the guests crepes suzettes the first night out, just to prove he could, cooking with simple pots and pans on a bed of coals from the camp fire. He also baked wonderful bread in a Dutch oven on the same bed of coals.
No hint of "traditional African foods."
I suppose if you asked for it, you would get it, but don't expect anything exotic.
Ugali, or whatever it is called where you are, if in Southern or Eastern Africa, a maise meal porridge sort of stuff. Not very tasty, bland. A staple of African diet.
Western Africa, I haven't been there, has banana dishes.
Most African food is unappetising.
The safari cooks are usually good.
