Nice.

It's funny when I hear German being spoken like that.
It shows just how much mine and my parents has morphisized into Germglish. No wonder my relative give me a blank look when I speak to them.

same here--was in Germany a few years ago --thought I would get along a lot better than I actually did..both sides of my paternal family were from Germany and spoke it often as I was growing up..was not nearly as fluent at I had hoped..

Waidmannsheil/HuntingSchneider/Ripp,
I do not know any German at all, looks like milk soaked liver & bacon with fried potatoes & spring onions in KNOBS of butter & plenty of pepper....YUM!
I like the presenter's style - even had a good wine organised whilst cooking!
Would be a lovely setting for a hunt & a few ales after putting your feet up for the night.
Very hard to top that gents isn't it
Be proud of your heritage gentlemen!
Cheers (don't know the Germanic version of it, but would have put it in if I did!)

93x64, the germanic version of cheers is "Prost". The chaps name is Francis Ray Hof and there are a lot of his clips on YouTube. He always enjoys a wine when he is cooking and normally talks a bit about what wine should accompany the particular dish. In one clip he forgets to try the wine and once he realises that he has almost finished cooking, he pounces on the bottle and guzzles some down with this look on his face that says 'Phew, that was a close one". They are really enjoyable to watch. This is what hunting is all about.

Waidmannsheil,
Thanks for the update, can certainly relate to Ol' mate forgetting to get the wine out when cooking!
Speaking of that; time for a nightcap....about a good 'finger' of port in a sturdy glass is what's required about this time of night!
Well cheers or should I say Prost gentlemen!

The liver is roe deer. Soaking in milk, any game, will reduce its gamey flavour, and also add to the taste in some ways.

As for the language, he might be using a dialect??? Maybe one of our German members could comment? My German is extremely limited, my ancestors having left in 1838! So WHEN I have trouble I claim it is the language from the 1830's ... ha ha, my excuse anyway. The older locals here who still speak the "local dialect" known as "Barossa Deutsch" which can be very different from Hoch Deutsch (High German), at least what I was taught at school versus the local lingo.

Eating a deer liver from a freshly taken deer is a great hunting tradition.

It's almost Hochdeutsch, a little dialect from the south. I think he used some swabian terms. But I am not sure...

Deer, moose, elk liver - sliced very thinly, into a VERY hot bacon greased pan - 3 seconds, flip - 3 seconds then onto the plate with boiled baby potatoes soaked in butter, salt and pepper along with a nice ale - perfect end to a hunt - and for breakfast the next day - sub good strong fresh coffee for ale - maybe.
Doesn't need milk, btw - very tender, juicy with mild flavour, unlike beef liver which could use milk or any other additive to try to make it palatable.

Daryl, the milk in this recipe was used to stop the liver from going to dark in colour when cooked, not to change the taste. Your breakfast sounds pretty good to.

This is a good recipe by Francis Ray Hof. I am sure the addition of Pinot Gris wine must have made it more tastier. I have come to notice, Francis always uses wine in most of his dishes

This is "Hochdeutsch" with a southern flavour, but hard to locate exactly.
I looked up Mr. Hoff's website, surprise, he is British but seems to have spent lots of time in Munich.
For a Brit his German pronunciation is superb!
The "south German accent" is a mixture of suebian, austrian etc, as Munich is not really bavarian anymore but a melting pot ..

Hi Fuhrmann, I had no idea either that he is British. As you pointed out, his German is superb, especially considering he learnt it at such a late age. Normally people learning another language at twenty years old or more tend to speak with a pretty heavy accent.

Just a guess, but perhaps his wife is German?
