One of my favorite ways to prepare salmon is to bake it with garlic, black pepper and mesquite seasoning and then a few minutes before it is done to turn the broiler on and add real maple syrup to the top and let it cook in. This creates a fantastic flavor.

and Lake Michigan has some very fine salmon too.....I really miss fishing there.

However the best way to do salmon is in the BBQ.....(barbie for you down under) I've had some great baked salmon but in the webber is still the best way and it should be illegal to batter fry a salmon.....

I used to smoke them but getting them rolled up in those little papers was too much work.

Being up here in Norway, salmon is probably the fish we use the most. It's good broiled, simmered, grilled, in soups, and then we use it a lot in when we make asian food like fried noodles etc. Not to mention using it for sushi/sashimi.

But I've never tried it with maple syrup! So I'll be trying that soon as possible Anne!

Vapodog, I think I won't try your version of smoking salmon! Prefer it the traditional way... Plus I quite smoking several years ago!

Erik, you'll love the maple flavor just make sure you use the real stuff, not the imitation maple syrup. You can even add lemon/pepper to it if you want. What species do you get there?

Vapo, I agree, some of the best salmon I have had was on a water soaked board set on a BBQ. It was real tasty.

BTW- the salmon in my freezer was caught by me in Lake Michigan on the last day of July. We reeled in many nice big Chinooks that morning.

Bakes has not commented but I suspect he prefers to do his Salmon on a "wok".

Anne,

The salmon we have here are "Atlantic Salmon", most of the salmon one buys here is farmed on our west coast, but wild salmon is availble too. I've only caught one salmon in my life (I'm not much of a fisherman!) and it was a tiny 10 cm fry that got hooked thru it's back! I dried it out, and hung it on my wall. Until one of our dogs ate it...

I'm guessing that John maybe meant "Mousse"? But I may be wrong. Paté and mousse are pretty close in consistany. Regardless, salmon mousse/paté is really yummy IMO. Never made it myself though.

Erik, It's really hard to get one of those things in a Barbie....but if you ever saw one of Bake's "wok"s you could get one there.

Ann was talking about Salmon....you know.....like in fish....

Well, we eat salmon enough that I think I've grown gills. I like to grill it the best. Teriyaki or just salt and pepper with a little lemon is tasty. Never been a big garlic fan.

Of course, smoked is delicious too.

Salmon jerky makes a fantastic high energy snack.

Different salmon have different flavors. I personally prefer the Kings (Chinook) that come out of the Copper River drainages. The Copper River Reds (sockeye) are nearly as good. From other river systems, I prefer sockeyes over the chinooks. The Copper River run have more oils and have a much better taste to me than those elsewhere. Though, I'm not saying that other places are bad, it's just the Copper River stuff is that excellent. From the Bristol Bay or Kenai areas, the sockeye salmon is very good and firm flesh.

I personally do not care for Humpback (Pink) or Chum (Dog) salmon, though do know many folks that enjoy it.

Coho (silver) salmon are the best fighters of all on the rod and reel. The flesh isn't quite as red as a sockeye, and the taste isn't quite as good. It is still fine table fare, much better than Humpback or Chum salmon, but not quite as good as sockeye or chinook. Coho have a more orange flesh.

I agree. Chinook and sockeye are the best. I like to smoke the salmon I get. Fillet and put in a dry brine: rub coarse salt on top, splash on some lemon juice and cover with brown sugar. Let this sit in the fridge for a day and the brine will liquify. Hot smoke it and make a nice candy. The BBQ is good as well with sliced oranges and lemons.

I very much enjoy smoked salmon as well. I prefer the lox nova type, which I think is cold smoked. That stuff is very expensive though. I am going to do my best to reel some more in late in July.

I don't make it but do buy a salmon type paste which is thicker than mousse and has a pate like consistency.

You can make a delicious salmon spread by using smoked salmon, cream cheese, a your favorite spices. I like the best with just crumbled smoked salmon and cream cheese. Good stuff.

Never cared for lox. Just don't like the texture. It is a big deal here, especially at the finer restaraunts.

DPhillips-try adding some finely chopped red onion and capers to the cream cheese. It'll knock your socks off it's so good.

You are right, Mike. My wife seems to enjoy it more that way. I've just never personally cared for capers with salmon, but think I'm the only one.

We got some Copper River Salmon last year from a friend who fished there. Utterly amazing.

My favorite way to prepare salmon is to grill it over oak wood with lemon and rosemary.

I serve it with a caper cream sauce with some jumpo lump crab meat. The sauce is made with shallots, butter, vegetable stock, brandy, cream, capers and crab. Heavenly, but not good for the arteries!

I came here looking for a different reciepe for fresh salmon. I think we will try Anne's.
