The krieghoff has the "less traditional" safety/cocking system, while the Chapuis is more traditional in the sense of how the safety works.
Both are good guns... I personally don't like the idea of the "cock on safety" feature of the Krieghoff, but that's purely a personal prefrence.
So the "best one" is the one you like the best.
Chapuis will build the stock to your dimensions at no extra charge - i'm not sure if krieghoff charges extra for that or not.
