Another Duck Recipe

It seems as though every time I come back from my annual duck hunt my guide has a new recipe for me to try. I thought I'd share it with you because my wife and I tried it last week and it was excellent.

Take your duck breast fillets, and marinate them overnight in the fridge in an equal mix of balsamic vinegar and olive oil. Add a little olive oil to a skillet and get it medium hot (not smoking). Add the breasts to the skillet, and turn once they are lightly browned. Once the other side is done, remove from the skillet, drain well, and enjoy.

I cook duck in the same way except I used Italian dressing for the overnight marinade. I would also cook diced up bacon in another pan along with a finely diced onion and serve over the top.

James, your recipe is a good one. I do the same with the Italian dressing, but then I wrap the filets in bacon strips, hold them in place with tooth pics, and do them on the grill. Your mix of chopped bacon and onion sounds like a winner.

Mike,

I do them like that also but I add a slice of jalapeno inside the bacon. Gives it some zip. And not too hot.

Taos-nice touch! How do you think it would work if you patted them down with a good Cajun seasoning? Just a thought.

I will be moving to Idaho in a few days and hope to get a whole bunch of ducks. I will try the cajun rub and anything else listed here for ducks!! Isn't Cajun anything always good?
