Roe Deer Back (cold)

Right - hunt is over...



it is -10deg. C outside and one has to deal with the all days cold (it is a good start as well)



...Roe Deer Back was in the fridge for a 2 days swim - marinade that is (milk, juniper berries, pepper, lemon...)



...it is garnished with bacon, poured over with a boiled butter and put into owen at moderate heat for 45-60min's






...in the meantime we prepare the sauce (Cumberland) - sliced orange skin, lemon juice, blackcurrant jam, mustard powder, salt - all this boiled in the red wine for 15mins





10 mins before the end, bacon is put aside and back is baked on the top



...cut...



...served...



...wine to go along...



...and some green...

I just now read your post, and I'm salivating like one of Pavlov's dogs. Does the marinade and sauce not overpower the flavor of the meat?

No - not at all (don't over use the sauce tho) - it gets just a bit sour + one may add a slice of an orange to make it sweet/sour

Daryl just says it but i have to agree. Excellent!

But may I criticise couple of things. First whisky, thats a decent blended scotch but you have to try single malt from islay. And eggs in salad. Sulphur off the eggs overpower wine many times.
But yes thats make my mouth watering.
