I want to get another ss. I want it to be in a 7mm or 30 caliber, perhaps the 30 Blazer. It will be rimmed. I want to scope it with a 2.5x8 on detachable mounts. No iron sights. Weight less than 7.5 pounds with scope.
My question is what action. I like the falling blocks for their strength but the scope gets in the way. The break actions are handy but not as strong.
I am looking for pro's and cons. Price will be 4-5k.

The Blaser K95 is about as sweet single-shot rifle as you can find and it will easily make your weight limit. It is a break-open but the lock-up seems really solid.

mickey I just got a Blaser K 95 Stutzen in 308. The rifle wieghs 5 3/4 lbs with out scope. I have only had it to the range one time. My largest 3 shot group was slightly under 1 inch at 100 yards. I shot 3 different factory loads and one reload. I shot 150,165,168, and 180gr bullets. I was very impressed with how the rifle shoots and handles. This is the full stock model with a 20 inch bbl. Andre Martens has the longer bbl model and has loads that will shoot one hole groups at 100 yards. A 7x64 would be a great caliber, but for me it has to be 308.  Also... I used the European QD Blaser mount and taking the scope on and off did not change the point of impact or the size of the group. This rifle will surely become one of my favorites. As to caliber, I have to second that 300 H&H FM. I had a set of Tikka 30-06 barrels rechambered into 300 FM and love them. 
I'll let those who know better than I pick your platform...sounds like more fun than whores on Friday night! The big boys told me all about them...

I have looked at hte Blaser and at the Merkel. I actually like the cocking safety idea. Great on a single shot.
No proponents of a falling block? Are they too heavy?
