Bulgogi

The only thing I really miss about Korea is the food. Beef bulgogi was my absolute favorite dish over there. If any of you miss that dish, here's a version that works for me. I got it from one of my NCOs/Sgts when I was in South Carolina, though he wouldn't share it until I was leaving. Until then we had an arrangement; I killed wild hogs and, for a portion of the meat, he'd make us a huge batch of bulgogi. Here goes:

TSgt, call-sign Devastator's, bulgogi
- 1 cup soy sauce
- 1/2 cup sesame oil
- 1 cup sugar (I now use about 3/4 cup or less)
- 1 bunch sliced green onions
- 3 cloves (I use 6) garlic sliced/minced
- 1/4 cup sesame seeds (optional, but I use them)
- I add chopped red cili peppers or whatever you use to make food hot
Marinate 2-3 lbs thin-sliced meat (I used black bear below) for a minimum of 1 hour (overnight is better). Grill meat. Make marinade into sauce by heating and adding a small amount of corn starch to thicken. Serve meat and sauce over rice or noodles.

Marinade

Grilling indoors

That looks good, the sugar part is interesting. Does it need to have the sugar?

Ann,

It's necessary to get my 13-year-old to eat it... Seriously, I believe some sugar is necessary to counter the salty taste of so much soy sauce. That said, a full cup of sugar is a LOT of sugar.

It's also quite good with deer meat -- nice because the deer meat doesn't have to be cooked well-done as it does with pork/bear meat which may carry trichinosis.

BTW -- Was that you I saw on Buzz Charlton's elephant hunting DVD? If so, that was one helluva an up close and personal brain shot you made. Wow!!!

Matt

Matt,

That was me, I hope I can afford to do another hunt like that one.

As for the recipe, I wonder how a natural sugar like honey or maple, would taste in that recipe? Either way, I plan to try it sometime. I am a garlic freak too and like how much you added.

Looks like a yummy recipe. I'll have to try it out with some moose ASAP.

From the ingredients you mention, I would think a touch of fresh ginger might make a nice variaty too.

Erik
