I'm sure someone has. Searcy once built a Double with a Graphite Stock. I can't see a reason to do it though.
Most Doubles cost enough that good wood is standard. If you are replacing a stock it would be silly, IMO, to spend $2000 for a stocker and $300 for the wood.
It certainly wouldn't help any resale.
