I think maybe wife. In one of the videos, there's a young boy with them.
Unless the accent is VERY pronounced & difficult to understand, I tend not to hear it.
He did say girlfriend though.

A ha! Italian was my second guess. A wonderful lady sharing these adventures, roughing it, and actively joining in. A great attraction for the videos as well.
I'd love to make outback and adventure hunting videos. Even better if they make some bucks.
Does your cousin's son sell these to any networks? Or is it all YouTube and Patreon?
If I made videos it might be more like the two Danes, and called "One or Two Fat Ugly Dudes Adventures". 
Only way to get eye candy would be to out a flyer up in Darwin youth hostels, "Wanted: Pretty Bikini Girls wanted for Bush Videos". Ha ha ha, sounds perverted!
