This topic has been going 'round and 'round for years now, so I thought now might be a good time to revive it to see if thoughts have changed.
In the 375s or 416s,when it comes time to select your hunting bullet for game that weighs between 700 - @2000 pounds, do you prefer a faster moving, lighter bullet, or a heavier, slower bullet.

In a 375 H&H, the 300 gr bullet. In my 416 Rigby, I've found that the 350 grainer can hit just as hard as the 400, if not harder, and has a flatter trajectory. Ross Seyfried did a write-up on using 350 gr. bullets quite some time ago and he felt it was a better killer than the 400 gr.

IMHO it depends enormously on the velocity achievable, relative to the threshold for hydrostatic shock. The general agreement is that it occurs above perhaps 2350 fps, give or take, depending on personal experience or who you listen to. If the lighter bullet will put you well above this threshold, and the heavier one won't, then there is definite merit in the lighter bullet (for thin-skinned game, as stipulated).
If neither bullet will exceed this threshold, then go the heavier one every time.
Very few of my serious hunting rifles exceed even 2150...... ...so you know where I stand!

Heavier bullet all of the time.
It also gives you better penetration which means you can take shots from different (not side on) angles and still get through to the vitals where as a lighter bullet may pull up before getting there.

An update. In the case of the 416 Northfork softpoint, I'd use the 370 grainer w/o any hesitation. Its velocity thresh hold is around 2600-2700 f/s.

Heavy and slow. This might not be the best example but it will prove my point, if a Porche at 200km/h and a 10 ton truck at 100km/h colide with a train, which one will cause the most damage to the train?

SAHUNT
Chalk one up for you, that was good!
Since I only use one bullet weight in each caliber, I choose the heaver bullet.

Heavy at a reasonably slow speed.
