Chital stalking 2014

Just got back from another great weekend of chital/axis deer stalking. My freezer was running low so I took my "old reliable" my old Merkel drilling. I took two stags, one on the small side and the other larger. It was an early rifle hunt so the stags were still in velvet.

The hunt started off hard with lots of rain and stormy weather. Got the first little one when him and one of his buddies tried to sneak up on me, shot him from my hiding place at about 50 yards or so.



The second day we had a good plan to glass a hill side and saw several groups feeding in the early morning. I got this one at about 150 yards. Sorry in advance for the crappy photos, all I had was my camera on my phone.

These pics are good enough, nice to see them! Never seen these animals before, looks like Fallow deer with the antlets of a Red deer!? /Staffan

Thanks John! Chital is best meat and the hides are great for having as decorations about the house.

Here is a recovered bullet from the second, larger stag:


Its a 7mm 154 gr. Hornady. It was a quartering towards me shot, across a small gulch or valley. Bullet went in through part of the left shoulder and lungs and then deflected back through the paunch stopped at the skin on the other side. The musheroomed bullet is about 134gr, so it lost about 20 gr in the animal. Not bad for breaking the front shoulder and then going through most of the paunch/ruminant material.

Please add my congratulations on the success of your weekend hunt.
I am yet to experience field-shot chital venison myself, but have several backstraps setting nicely in my fridge at the moment.

Would you be so kind as to share a recommended recipe or cooking methodology to bring out their best?

Well done on your hunt Chasseur. You have, what is to me, the best eating of the deer species there and the preetiest.

Their antlers are more akin to the Rusa than Red deer. Fewer tines and slightly different shape.

Marukai, I have three "go to" recipes for the meat:

(1) For the backstraps I like cutting it into medallions and putting a pepper, coffee and rosemary rub on them and then lightly grilling or frying them. Just searing the outside and having it nice and rare on the inside.

(2) For hams etc. I like cubing it and making a "venison burgundy", the long stewing process in red wine keeps the venison nice and soft.

(3) For trim and less good cuts I like grinding it up and making either meatballs for Italian food or making Indian kebabs.

On her third journey on the open hill for our chital/axis deer the Alexander Henry 500BPE express rifle finally takes a large axis stag.
On her first journey way back in April last year she took an axis doe at 180 or so yards (http://forums.nitroexpress.com/showflat.php?Cat=0&Number=229567&an=0&page=1#Post229567), and now on her third trip to the beautiful island of Lanai I managed to take an old fat stag at about the same distance. Spooked a small herd of 10-12 deer on a ridge. I didn't have a great deal of time so I had to make a quick shot off my monopod/shooting stick. I waited and one of the larger males in the group stopped for a moment too take a look back at us and I was able to make the shot.



He was a good old stag with one malformed antler. Fun to stalk deer with a 140 year old open sighted double

Well done on the chital stag, Chasseur.
Stalking traditional game with open-sighted vintage doubles? We live for this stuff!!

BTW, did most of the backstraps I had acquired as lightly-seasoned grilled medallions- marvelous fare!
