This is a recipe I've had and used in a number of camps and it has always been a popular meal. I believe it's a South African dish, or at least it was given to me by a South African. Basically it's curried beans.
3 red onions sliced thinly oil game ribs cut into smaller pieces good size green chil pepper palm full of chopped fresh garlic heavy pinch of curry spice 1-2lbs of favorite dried beans, soaked, ready to cook 1 cup of good wine Salt and pepper to taste
Brown the ribs with the onions, spices,chili pepper(chopped), and garlic in hot oil in a dutch oven or cast stew pot. When brown and smelling right, glaze the pot with the wine, scraping up all the good stuff and add the beans with enough water to cover. Simmer until beans and meat are tender. Make sure you adjust spices when you add water or more wine. Serve with crusty bread or cathead biscuits, finish off the wine...............not bad! If you add berbere while cooking, the finished product is great with cold beer. Enjoy!
