Favorite/Least Favorite Meal On Safari

OK everybody. What is the best and worst meal you've ever had while on Safari? My favorite is a toss-up between Nyala fillet, grilled over an open fire, then cut into bite size pieces and dabbed into a mixture of salt, pepper, and perri-perri sauce. The other favorite was Impala liver, sauteed with onions and butter. My least favorite was Ostrich. I had heard how good it was, but I found it very dry, and strong flavored. Perhaps it was in the freezer too long.

My favourite must be eland fillet and my least favourite is Buffalo anything! When I'm in Tanzania and Mozambique for my buffalo hunting seasons which run one into the other I get fed Buffalo about 6 day's a week. It's tough as hell cos we only shoot the old bulls and very strong. So I get to hate the damn stuff.............. still, the hunting makes up for it in a big way!

The worst thing I had was some Impala meat that was over done. It had been cooked prior to returning to camp as I was out late hunting bush pig. Nothing worse than dry, overcooked meat. I was REALLY hungry that night too as it was about 10 pm and had been hunting hard all day.

I am happy with any tenderloin meat, hard to beat when done right and that's cooked rare to medium rare. I bet even a tough old buffalo bull has good tenderloins.

I do not care for "neck" of anything, I find neck meat to be rather tough. I grind it on my deer and certainly don't find it apealing as a steak cut.

I had a client last year who was a "TV Chef" & he cooked us all a zebra (fillet) wellington which was fabulous.

In all the years I've been kicking around Africa, I'd never eaten zebra. But this guy assured us it was great if you cut ALL the fat off before cooking it, & he was dead right!

Just another little tidbit here: for those of you who don't particularly care for venison, or who has a spouse who doesn't like it, let me share this with you. African game tastes like nothing else I've ever had. The vast majority of it is wonderful. My wife doesn't care for(read hates)all North American game meat. On her trips to Africa with me, she goes back for 2nds and 3rds of all the game dishes. She absolutely loves it.

For the best meal,it is a toss up between Eland steak and Buffalo tail stew and sadsa.
The worst, was Elephant tail stew. It was like chewing rubber !
