Wild goat in camp oven INGREDIENTS
5 white onions, halved 2 fore legs of wild goat 10 whole tomatoes, quartered 6 cloves garlic 2 sprigs rosemary 2 bay leaves bunch of wild Greek oregano 375ml white wine sea salt and pepper
METHOD
Place the onions in a camp oven or casserole to cover the bottom. Place legs of goat on top and add tomatoes, garlic, rosemary and bay leaves.
Sprinkle over wild Greek oregano which has been rubbed together to remove branches from leaves.
Pour in white wine and season.
Cover with lid and place on top of coals on the outer part of camp fire.
Place coal ashes on top of camp oven and leave to cook for 1½ hours.
If cooking at home place casserole dish in oven which has been preheated to 180°C/160°C (fan forced) and cook for 1½ hours.

Well under-rated goat IMO, especially young ones. They do them in a similar way in N Spain and Portugal, you do get through some tooth picks afterwards though best
