Hunting: Recipes

Bear Meatloaf

1/2 cup red pepper, minced
1/2 cup onion, chopped
1/2 cup carrots, chopped
1 teaspoon marjoram
1 teaspoon curry powder
1 egg, beaten
1 cup ketchup
1/4 cup bacon, chopped, raw
1/ 1/2 lbs. bear hamburger
1/4 lb. ground pork
Salt & pepper to taste
In a large mixing bowl mix all ingredients and then form the bear-pork mixture into a sprayed or oiled meat loaf pan.
Bake at 350˚F in a barbecue, over indirect heat, for about 1 hr. or until meat is firm and reaches an internal temperature of 150-degrees.
Let rest 10 minutes and then slice and serve.
Serves 4-6

So meatloaf has no bread or similar in it?

I've only had it once, and it was definitely not all meat, and really turned me off it. But might not have had the best ingredients, being bought from a shop and on "special".

Will give the above recipe a try, however without the bear! I wonder if koala would substitute? (to any greenie fools out there, only joking!)

Meatloaf can have a variety of grain ingredients. Bread, oats, rice, etc

When we lived in RSA my wife mentioned to some friends one evening that she was going to make meatloaf for supper the next day and I said something to the effect that I was looking forward to it. Everybody turned their noses up and said as far as they knew, it was as you say, a turnoff!

Then we discussed what meatloaf was to them, and what it is to us. Just a few differences, but my take was that their recipes for the most part were simple ground meat blocks, tasteless and dry by the end of the cooking. Ours, quite different, tho with only a few common ingredients added and it is delicious. Evidently the common recipe in RSA WAS pretty bad {at least as described to us}. Not so my wife's {or my Mother's, or many other US women for that matter} who make delicious meatloaf.

It was pretty interesting to me as anything about food is!

Anyway, my wife is a phenomenal cook. German {her roots}, Meditterranean, Old American, whatever. And since we raise pork, lamb, beef and add to it game meat, we eat a lot of meat dishes. This new recipe above we'll have to try. We normally do not grind any bear meat, and make pot roasts, steaks and chops.

Meatloaf can be very good, or very bad.

I like to add cornflake crumbs to mine - chopped onions are manditory along with chunks of galic, Worchestershire sauce along with a bit of chili powder. Salt and pepper, of course and I've added some Tai chili sauce at times with Elk burger, which was good, but too hot maybe for some. Of course, with beef, I only put Ketchup on top, not inside. I'd think that might make it too moist. Never tried it with bear - never will. I'm off bear now.

My mom in law makes wonderful beef meatloaf. Meatload sandwiches next day, if any left.
