Found this simple recipe on the SBS Food & Wine Lovers guide web pages

Yabbies
So how do you cook them? First "anaesthetise" them in a bucket of ice for about 20 minutes. They can then be butterflied (cut in half), brushed with olive oil and some diced garlic, and thrown onto a barbecue. To cook them quickly, Kris Gaunt of Mulataga recommends covering them with a large pan lid for a few minutes so that they steam in their own cooking juices.

Out of the dam and stright into the cut down keg half filled with water on a good fire A bit of lemon ,salt and pepper and a can of Melborne Bitter Or up at the house,curried on a bed of rice with a bottle of local CSU shiraz or one of there blends(Charles Sturt University winery)Only problem is that the dam has been empty for 4 years

However you cook them - first get the mud out of them by keeping them in clean, non-chlorinated, oxygenated water for a day first!

Compliment accepted! Having visited Louisana a couple of times, I could die happy on Cajun and Creole cooking!
But, we will stick to calling them "Yabbies", rather than "Crawfish"!
Here is a recipe for cooking Crawfish Cajun-style that works perfectly well for Yabbies, Murray Crays and Marron (from Western Australia"!!)
Hmmmh...now I can't wait for Yabby Season...the buggers hibernate in Winter!

My wife would dearly love to feast upon the crawfish bisque. I, on the other hand, am deathly allergic to shellfish. Even the smell of shellfish cooking gives me blinding migraines and nosebleeds.

Good thing you're not Cajun with an allergy like that!
Here is a recipe for Crawish Bisque for your wife...
For the sake of your health, may I suggest that you take yourself off for a spot of hunting while she is has a Crawfish Cook-up!
BTW - are they available outside Louisiana?? I have a longstanding involvement with Yabbies - my father used to catch them commercially in the Menindee Lakes here, and send them via the Indian Pacific train to the Sydney market - pioneered their commercialisatin here - but ultimately wild-caught Yabbies have been supplanted by commercially grown (farmed) Yabbies. My cousin once ran a Yabbie Farm in Buronga, NSW, and was famous for breeding Racing Yabbies - sent them all over Australia!
