Just moving a new wine rack into the hall. It only holds 260 bottles though .

Anyway found an cellar book for recording wine with some quotations of the wise.

I believe that I am being robbed in broad daylight of one of life's finer pleasures. No matter how hard I try, I have not been able to develop a taste for wine. Most whites give me a crushing headache within five minutes of ingestion, most reds I find too sweet or the drier wines I find have too much tannin for my taste.

My wife is a wine lover and will drink a fine port till it comes out her ears, has her very own whites that she reserves for special times, but no matter how hard I try, I always end up with a bourbon or single malt scotch in my hand.

Having said all this, there was a California Merlot, that I found when we lived in Florida, and there was a very small vineyard, about 12 acres, tucked up in a little valley about 15 miles from my hometown in PA, which produced a red, they called Country Red, which I really enjoyed. I can find neither here.

We went to a wine tasting several weeks ago, there was nothing I liked out of about dozen and half varieties. I have tasted French, German, Spanish, Italian, Australian, Portuguese, Californian, and most any locale you can throw in.

Maybe a few days in the bush with you will make all the difference!!

I am myself allergic to sulphur and there is a small amount of sulphur in most white wines so I know what you mean. Sulphur is added to grapes when picked to prevent oxidation. And guess what I'm the one that has to sprinkle it into the load after picking. I still drink white wines though as they are very nice slightly chilled on a warm afternoon or with the right foods such as seafood.

Red wines on the other hand are very free from chemical additives. Some are over oaked. A lot of Australian wines are "big" wines so often need to be drunk with food. Try a spicey venison steak, medium rare and combine it with a nice Shiraz or Cabernet Sauvignon. Matured cheeses also go well with big reds. A lot of wines really deserve to be paired with good food.

Some lighter reds have minimal oak or no oak and can be very nice as well. You may like to try some of these.

Wine can be an acquired taste.

The above quote is from me. I have yet to find a wine that I like. My wife is a wine lover, and has forced me to try nearly every sort under the sun, still not for me.

When I talk of the safari to Africa, she always raises an eyebrow and tells me not to forget we will visit the South African Wine country.
