I have friends who can moose meat. I've eaten it, really good.
My wife canned some rainbow trout - VERY nice! She put in a small piece of smoked trout, which made the canned stuff
taste EXACTLY like Cloverleaf canned Sockeye Salmon. I love that stuff with mayonnaise and onion, salt and pepper - in sandwiches. Yummy!!

I'm thinking of trying it.

Anyone who can answer?

How long does it last outside refrigeration unopened?

Does the canning pressure cook the meat?

Is it eaten usually cold or heated?

How does it compare to defrosted frozen fresh meat?

The canning operation cooks the meat & it is eaten cold or heated. It is usually tenderized in the cooking/canning operation.
Lasts as long as any other cooked meat, I guess.

My mother canned chicken, beef and venison, it's good eating and handy for a quick meal.

I've canned venison and should do so again. If you plan on canning meat, use a pressure canner to prevent Botulism.
