I might be a wee bit prejudiced, but fat White Tail loin cannot be beaten for flavour - at least in North American wild game.

The local whitetail are tasty, but for premium meat, here in Texas they have competition from Axis, Fallow, Nilgai, red deer, elk, feral hogs, Warthogs, and Pronghorn plus more exotics than I can keep up with.
My favorites are elk and red deer, so I rarely hunt whitetail anymore. Below is Pronghorn taken in Texas Panhandle with .308. Lots of good eating.

I got my season off to a good start this morning. A buck started across a power line I was watching. He turned directly toward me and started down a steep hill into a ravine where I would lose sight of him almost immediately, so I snapped a shot aiming between his should blades. He fell immediately and was out of sight.

He turned out to be smaller than I thought, a 140 lb 7 point. But that is fine because he will taste great! The distance was 160 yards. The load was a 160 gr Hornady RN at just over 2000 fps.




For those interested in such things, my aim was off a mite. The shot hit just to the right of the backbone and ranged downward and across the chest cavity, exiting to the left of center about at the diaphragm. The white rod is in the entry and exit holes. You can tell by the angle how step the hill he was going down was.

Congrats to you fellows for making fine meat. I rejected probably my only shot on a spike but, have a couple more weeks.
