I think it is because they are "bottom feeders" and stir up
the mud looking for food that the flesh tastes very muddy.

I have easten Carp and you can do so, especially from
"cleaner" streams / rivers etc. I just don't think it's
that nice anyway !!!

I'd eat it in a Survival situation though.

Someone else may be able to add more light on your question.
