Here's a simple recipe for preparing your goose or duck. Filet the breast meat off of the goose or duck. Then marinate the breast pieces in Italian salad dressing, in the fridge, for @ 1 hour. Remove the marinated breasts from the fridge, and wrap each piece with several strips of bacon-securing each bacon strip with a tooth pic. Get your bar-b-cue grill good and hot. Put the breasts on the grill, and cook each side until the bacon is almost burnt to a crisp. You'll love it, and the bacon keeps the breasts from burning. It's almost impossible to overcook them this way. |
