One of the most important landmarks in Madras/Chennai is the "Ice House" on the Marina Beach where the British brought ice in on ships and preserved it before selling it for frightfully high prices from the late 1800s until refrigeration became available. If you would like to avoid using ice, do try the recipe without ice - this is a good suggestion to me as I have never tried it this way myself!

But the use of ice itself would not be out of place at all as it may have been used for a long time in making cocktails in India.
