Back when I was trapping a lot I trimmed up some of the younger ones and tried the meat. The texture was similar to beef I thought (we very, very rarely eat beef though, so I may be off there) or bear. The flavor was fine, used it for a pepper steak and it was good as any other meat we used (deer, elk etc.) Like most game I just made sure all the fat, membrane and such was trimmed off, too you always hear about beaver tail, the ones I've skinned were just fat and cartilage, never saw a point in eating that kind of thing. |
