We got some Copper River Salmon last year from a friend who fished there. Utterly amazing. My favorite way to prepare salmon is to grill it over oak wood with lemon and rosemary. I serve it with a caper cream sauce with some jumpo lump crab meat. The sauce is made with shallots, butter, vegetable stock, brandy, cream, capers and crab. Heavenly, but not good for the arteries! |
