Anne, The salmon we have here are "Atlantic Salmon", most of the salmon one buys here is farmed on our west coast, but wild salmon is availble too. I've only caught one salmon in my life (I'm not much of a fisherman!) and it was a tiny 10 cm fry that got hooked thru it's back! I dried it out, and hung it on my wall. Until one of our dogs ate it... I'm guessing that John maybe meant "Mousse"? But I may be wrong. Paté and mousse are pretty close in consistany. Regardless, salmon mousse/paté is really yummy IMO. Never made it myself though. Erik |
