BTW - are they available outside Louisiana?? I have a longstanding involvement with Yabbies - my father used to catch them commercially in the Menindee Lakes here, and send them via the Indian Pacific train to the Sydney market - pioneered their commercialisatin here - but ultimately wild-caught Yabbies have been supplanted by commercially grown (farmed) Yabbies. My cousin once ran a Yabbie Farm in Buronga, NSW, and was famous for breeding Racing Yabbies - sent them all over Australia!
