I got a wild hair and decided to cook some real food yesterday; after scrounging through the cupboards i found all the ingredients for vindaloo. 4 t minced garlic 1 T ground ginger 2 t crushed red pepper 1 t ground coriander 1/2 t ground cumin 1/2 t ground cloves 1/2 t ground cardamon 1 t ground cinnamon 1/4 cup cider vinegar 1/2 cup red wine 1/8 cup lemon juice 1/2 t salt 2# boneless pork chops Combine the vinegars and lemon joice. Add the spices to make the marinade. Cut the pork chops into 2" squares, marinate about a day. Put 1/4 cup olive oil, 3 bay leaves, and 1 t peppercorns into a dutch oven or covered skillet, add the pork, then add the marinade. Simmer covered for a couple of hours. Serve hot over rice. The nice thing about this recipe is that it is fairly easy to assemble in camp, and works with almost any meat. |
