Back East, in Ontario, I used to soak the cotton tail pieces in milk, in the refrigerator overnight, before cooking. (usually frying) the next day or freezing the pieces for a later supper.
When frying, I would roll the pieces in salt and peppered flour, then right into the buttered frying pan.
Later on, Dad had me roll them in whipped egg first before the flour and that was even better. Fried crisp on the outside.
