Capercaillie was a delicasy in the days of the Czars, but much depends on the person who's cooking. Proper hanging of the bird is necessary, as far as I undersand. Never lived myself in places where they're numerous enough to hunt.

And just in case if you're thinking about going to Russia to hunt capercaillie, think fast. Visas and shotgun import permits may take a couple of months to get.
