We have a set quota of stags that should be taken according to their age: 40% 2-4 y.o., 40% 5-9 y.o. and 20% 10+ y.o.

On growth - stags reach their trophy peak between 10th and 12th year - growth can be quite considerable - while antlers grow a bit longer each year (the shape usually remains the same) the main difference is in mass - perspective stag can even double the mass of the antlers between 5th and 12th year.
