The real reason in today's world is that H&H can add a couple thousand pounds to the order for a bolted safety.
That, and they look cool...
They really have no place on a professional's gun and as stated, many professional hunters either deactivated the safety or at least made them non-automatic on their own guns.
My Greener has an auto safety and it has caught me out more than once during fast reload and shoot practice. Good thing the only harm was a little embarrassment

The other comment, "Critique is based upon an informed opinion, and never upon personal opinion! " can be taken in any number of ways.
My first reaction was that this is something you would hear from a salesman. As if saying, "I know better than you, and this is how it is done".
But consider, informed opinion always begins as someone's personal opinion. Only as the opinion is widely accepted as reasonable is it adopted as informed opinion. Take the debate over the bolted or automatic safety as an example. The personal opinion of John Taylor is that they are not needed on a DG rifle. His opinion also happens to be the most informed opinion of anybody whom has ever written on the subject through his own experience.
Bolted safeties are often fitted to H&H doubles of all calibers. Who's "informed opinion" carries more weight, H&H or Taylor's?
The addition of the bolted safety on a DG rifle is based purely on the personal opinion of the buyer. After all, he is the one signing the check...
