Rusty, In India and possibly in other Asian countries water buffaloes are used as milch cattle and also eaten for their meat. It is a little tougher than beef though it has considerably less fat. The Brits used to call it "carrow beef" in India and official government references to buffalo meat in India still call it by that name though I have never been able to find out what the term means or how it came about. Indians also like to eat the liver and the brain fried with pepper and different herbs. It is spicy and goes extremely well with a nice beer on a hot day.
