Many are fit with stalking safeties on each hammer.
Personally, I agree with cocking both hammers - there is really no reason that a hammer gun would be more likely to double discharge than a hammerless.
Plus, in the case of a misfire, you can quickly recock the hammer and give another go! Probably not very likely either though.
